Wonderful Sam. I have a server set up with 3 IPs, domainnames and certs
to try this out with a fresh install of courier-0.67.0.20120422. I can
send to and from these 3 domains on the same server but I am getting a
relaying denied when trying to send offsite.

Also, when I enable SPF checking in /etc/courier/bofh it does not seem
to recognise these vhosts.

I haven't actually installed Courier from scratch for quite a while so
maybe I haven't configured everything properly... but if it's working
for and between the 3 local vhosts then it must be pretty well correctly
configured.
